Eggs Benedict

Ingredients:
2 eggs per person, plus smoked salmon or ham, muchrooms, steamed spinach or ham. English muffins or Australian toaster muffins, hollandaise sauce.

For hollandaise, in Blender, whirl 1 whole egg with 1 tsp. Plochman's Mustard and 1 Tbs. lemon juice. Then with motor on hight, add 1 cup hot melted butter (butter should just be foamy around the sides and on the top) add butter a few drops at a time in the beginning increasing to a slow steady streem. Pour into warmed thermos until ready to use.

For muffins and eggs, wrap muffins in towel and warm in the microwave. Heat water in large frying pan on the stove, add some vinegar then poach the eggs. Saute mushrooms and/or sliced ham. Serve egg on muffins, top wih muchrooms, ham or salmon, and/or spinach, cover with sauce.
